Effect of Diets Containing Soybean on Ferric Nitrilotriacetate-induced Nephrotoxicity

Abstract
Soybean is a rich source of phytochemicals as well as protein and lipid. Isoflavones have been reported to possess various health benefits including anti-carcinogenesis, anti-aging, and anti-oxidative activities while anthocyanins revealed a good antioxidant activity. Two varieties of soybean Aga No 3 and No 4, newly bred in Kyungpook National University, contain excessively high level of isoflavones, compared to regular varieties such as Daemang No 2 and Black Ilpoom No 1. Four varieties of soybean used in the present study revealed strong antioxidant activity as assessed by DPPH and DCFDA assay. In vivo experiment in which mice were treated with ferric nitrilotriacetate (Fe-NTA) known to induce kidney damage by oxidative stress demonstrated that diets containing anthocyanin-rich varieties such as Black Ilpoom No 1 and Aga No 4 were most protective from kidney damage induced by Fe-NTA.
